The Z2 takes a wide range of 80mm flat burrs, and every set we offer mounts with the 3 pin blind system your grinder ships with. Burr swaps take about 5 to 10 minutes, so many owners keep multiple sets and switch between them. Here is how our five options compare.
At a glance
| Burr | Best for | Taste | Roast level |
|---|---|---|---|
| Core | Espresso | Neutral and clarity-forward with medium body | Light (longer ratios), medium to medium-dark |
| SSP Lab Sweet (LS) | Espresso and pour over | Medium body, sweet, layered, rounded | Light, medium, dark |
| SSP Ultra Low Fines (ULF) | Pour over, Turbo and low-contact espresso | Light body, very high clarity and flavor separation | Light, medium |
| SSP Brew | Modern pour over | Minimal fines, tea-like clarity, great flavor separation, complete | Light, medium |
| SSP Low Uniformity (LU) | Pour over with more body, high-volume espresso | Balanced, moderate clarity and texture | Light, medium |
Core
A neutral, clarity-forward espresso burr with medium body. Core emphasizes clean flavor separation over heavy texture and performs consistently across a wide range of coffees. It handles light roasts at longer ratios and medium to medium-dark roasts at 1:1.5 to 1:2.
Great for: anyone who wants one broadly capable espresso burr for both modern and traditional shots.
Keep in mind: Core can make an occasional pour over, but it is not designed as a true dual-purpose burr.
SSP Lab Sweet (LS)
Based on the classic cast Lab Sweet filter burr, with geometry refined to build pressure for 9-bar espresso while keeping its sweetness-forward character. Expect medium body, strong sweetness, layered complexity, and rounded flavor blending.
Great for: a single set that performs well for both espresso and filter across light, medium, and dark roasts.
Keep in mind: if you want extreme clarity or acid-forward cups, look at ULF or Brew instead. As a cast burr, Lab Sweet takes a little longer to season.
SSP Ultra Low Fines (ULF)
Light-bodied with very high clarity and strong flavor separation. ULF prioritizes precision and transparency over texture, and it shines with clean, lightly developed coffees.
Great for: light roast pour over, and Turbo, low-contact, or "sprover" style espresso.
Keep in mind: ULF is not the pick for traditional 9-bar espresso, dark roasts, or a body-heavy cup. With funkier or more developed beans, its clarity can highlight flavors you may not want.
SSP Brew
A modern pour over specialist with minimal fines, tea-like clarity, and great flavor separation for light and medium roasts.
SSP Low Uniformity (LU)
Trades a little clarity for a more blended cup with moderate body and texture, plus slightly easier extraction.
Great for: pour over drinkers who want more body than ULF or Brew.
How to choose
Mostly espresso? Start with Core. If you prefer darker roasts and a thicker, sweeter shot, choose Lab Sweet.
Want one set for everything? Lab Sweet.
Mostly light roast pour over? ULF or Brew for maximum clarity, or LU if you like more body.
Want two sets? Pair an espresso burr (Core or Lab Sweet) with a pour over burr (ULF, Brew, or LU). Skip pairing ULF with Brew, since they cover similar ground.
After you install new burrs
Set your zero point before grinding, and never run the grinder with the burrs touching. New burrs also take time to season. Coated burrs usually settle within 1 to 2kg of coffee, and cast burrs like Lab Sweet take closer to 5kg. See Setting the Zero Point on Your Z2 and Changing Burrs on Your Z2.
